Purslane

Purslane, an edible weed, grows on the sidewalk near Turtle Lake Refuge on Third Avenue.

Properties: High in vitamin C, omega-3 fatty acids and beta-carotene.

Uses: Tart, crunchy and vaguely salty, purslane is good in salads and blended into smoothies or juice. Many cultures use it in savory dishes, such as stir-fries or casseroles.
