Amaranth or pigweed

Amaranth, an edible weed, grows at Turtle Lake Refuge on Third Avenue.

Properties: Seeds are high in iron and protein; leaves are high in vitamins A and C.

Uses: Greens can be used like spinach; seeds, which in local varieties are small and black, can be mixed in with any other grains for use in granola, bread or cereal.
