Beth Holland is food editor at the Durango Herald. She is a former features editor and self-proclaimed foodie with a special interest in local and sustainable cuisine. Her husband, Andy, is an avid hunter, and together the couple has developed a delicious repertoire of recipes for wild game, including “Moosolini” Italian sausage and “French Moose” breakfast sausage with Herbs de Provence. A Durango resident since 2002, Beth has a master’s degree in journalism from Northwestern University’s Medill School of Journalism. She is the owner and founder of Red Tulip Communications, a local marketing and communications firm.

Karen Brucoli Anesi is a food writer. She has a master’s degree in journalism from Ohio State University and was a special mention honoree at the 2009 National Symposium of Professional Food Writers. She has worked as a bartender and prep cook, taught writing at Fort Lewis College, and written columns and restaurant reviews for the Herald. Her approach is straightforward: “Meals start in the garden. Cooking always should be fun. Eating is a ‘plant to plate’ celebration.”
