Iron Horse Chef competition heats up market

Mom’s Green Chile and Zucchini Soup

1 onion, diced
4 cloves garlic, minced
4 large green chiles (depends on hotness), diced
2 medium zucchini, cubed
4 cups veggie or chicken stock
1 c sour cream
Sauté onions and garlic until onions are translucent. Add green chiles and sauté for 5 more minutes. Meanwhile, steam zucchini until soft. Add zucchini to sauté pot and allow to slightly cool. Puree all ingredients with 3 cups of stock and then cook down with remainder of broth. Add sour cream 10 to 15 minutes before serving.
