I was going to write a long letter objecting to Dr. Matthew Clarks comment about saturated fats being bad for the heart (Herald, March 21), but Nancy Utter, on the next page of that days health section, did it better than I could. I particularly like studies showing older women with higher cholesterol live longer than those with low counts.
The increase in heart disease and cancer since the 1940s when hydrogenated and refined oils and cereals that are overheated and adulterated with additives surely is related. For more studies and information, you can check out www.westonaprice.org, especially the heart disease issue of the Wise Traditions magazine.
