2 tablespoons olive oil
1 medium onion, diced small
1 medium zucchini, diced small
2 apples, any kind, diced small
2 cloves garlic, chopped
Salt and pepper
1½ teaspoons ground curry
1 teaspoon coriander
1 teaspoon ground ginger
1 teaspoon cumin
2 dried chipolte peppers, diced medium
2 cups heavy cream
¼ cup honey
4 to 5 fresh basil leaves, chopped
Juice of ½ lemon
Saute onion, zuchinni and apples in olive oil until soft. Add spices and saute until fragrant.
Deglaze pan with white wine or water.
Add cream and simmer for 10 to 15 minutes.
Add honey, basil and lemon, and enjoy.
