Black bean cakes are hearty option for meat lovers

Black Bean Cakes

Servings: Makes 8 cakes


Ingredients:


2 tablespoons olive oil
1 small onion, diced
2 cloves garlic, minced
2 cans refried black beans
1½tablespoons ground cumin
1½ teaspoons salt
1 egg
2 tablespoons apple cider vinegar
1 cup cornmeal
2 cups panko breadcrumbs

Method:


Heat 1 tablespoon oil in saute pan and cook onion until soft. Add garlic and stir until aromatic, about 1 minute. Add cumin then combine with black beans, salt, egg, vinegar and cornmeal. Mix well.
In a separate bowl, add 1 tablespoon oil to breadcrumbs and mix.Grease a sheet pan. Preheat oven to 400 F.
Form bean mixture into patties using a ½-cup measuring scoop. Drop into breadcrumbs and pat to coat. Gently flip the cakes and coat the other side, then transfer to sheet pan. Bake for 15 minutes, flip the cakes over and continue baking for another 15 minutes. Serve hot.
