A souper night

Durango chefs serve comfort food to benefit Hospice of Mercy

Hot Tomatoes’ Broccoli and Cheddar Soup


Ingredients:


1 gallon vegetable or chicken stock
4 broccoli stalks/crowns, cut into small pieces
2 large carrots, cut into medium pieces
1 medium yellow onion, cut into medium pieces
1 cup heavy cream
2 cups shredded cheddar cheese
Salt and pepper

Method:


Place all vegetables in large soup pot. Pour stock over vegetables and simmer for 1 hour.
Place soup mixture into blender and blend for 30 seconds. Repeat until mixture is pureed.
Return mixture to stock pot and add heavy cream and cheese.
Season with salt and pepper to taste.
