Chocolate Sugar Cookies

Yield: About 3 dozen cookies

For the Dough:

2¾ cups flour

¾ cups cocoa powder

½ teaspoons salt

1 teaspoon baking powder

1 cup unsalted butter, softened

1 2/3 cups sugar

2 eggs

2 teaspoons vanilla

for the icing:

2 egg whites

2 teaspoons lemon juice

3 cups sifted powdered sugar

Preheat oven to 350 F.

Beat butter and sugar until pale and fluffy. Add eggs, vanilla and continue beating.

Add the flour, cocoa, salt and baking powder, and mix until well combined.

Divide the dough into two parts, wrap in wax paper and chill for at least an hour.

Flour a work surface, then roll out dough to about ¼-inch thick.

Cut shapes, place on dry cookie sheet and chill for another 15 minutes.

Bake for about 10 minutes, then transfer to rack and cool completely.

For icing, beat egg whites in bowl of electric mixer with the lemon juice.

Add the powdered sugar and mix until well combined. It should be thick enough to be spreadable on cookies without running.

Decorate cookies, then let them dry overnight. Store in airtight containers.
